The possibility of reconstructing the existing process line for the production of Dunavia cheese has been investigated, with expected advantages as follows:
- Obviating the need for installing, respectively, making capital investments in the expensive continuous flow milk standardization unit.
- The membrane surface area of the existing line (10 000 kg/h) is 360 m2, while that of the reconstructed line would be 300 m2. There would be a significant economic advantage due to the lower capital investments in the plant, as well as to the reduced costs of the periodic total membrane surface replacement.
- The application of an approach similar to that in patent No 47481 to the reconstructed line would result in a certain reduction in the Dunavia and Feta cheese ripening time, which would increase the economic efficiency of the production process.
